Super Easy Cookie Bars
I just tried it on a whim, honestly. We picked up these boxes of Pink Lemonade Cookie Mix for next to nothing and stuck them in the cabinet. I keep things like that around when I can, as a “just in case.” Money gets tight around here and it’s handy when you need a treat to take at a gathering of some sort.
(Which reminds me, I need to come up with something yummy to take to a big karaoke cookout some friends of ours are putting together in a couple of weeks! So excited!)
There was a can of Light peaches on the pantry shelf, so I decided to see how it would turn out if I threw them together and baked them.
First off, the batter was almost blindingly pink! I thought it was pretty, but a little scary, too.
It didn’t look quite as scary once it was in the pan, though.
I wasn’t sure how long to give these, but I put them in at 375 degrees F and started them off at 20 minutes. They definitely needed longer. I was finally happy with them at 35 minutes, but I like cookies and cookie bars pretty soft. If you like them firmer, you might want to go to 40 or 45 minutes.
They were very soft, with a consistency that seemed like a happy marriage between a cookie and a cake. The sweet tartness was nice, but my favorite part was the peach bites.
All in all, I’d say that these 2 Ingredient Peachy Pink Lemonade Cookie Bars were a success!

- Pink Lemonade Cookie Mix
- Canned Sliced Peaches
- Preheat oven to 375 degrees F.
- In a large mixing bowl, stir peaches and cookie mix together.
- Pour into greased pan and bake until done to your liking - For softer bars - 35 minutes. For firmer/crunchier bars - 40 to 45 minutes.
