Apple Pie Peanut Butter Overnight Oatmeal
I have been looking at recipes for Overnight Oatmeal for a couple of years now. It is very popular with bloggers and they seem to be incredibly versatile and easy to make to suit every taste. Part of me has really wanted to give them a try. After all, I am a fan of a good Overnight Breakfast!
Unfortunately, there was a bigger part of me that was hesitant. I’ve read more than one person talk about how disappointed they were with the results and how slimy and unappetizing Overnight Oats can be. After all, they aren’t cooked. And apparently, this is an issue for some people.
Tips For the Best Overnight Oatmeal
Thankfully, as I read through the various blogs about Overnight Oatmeal, I started to discover a few important tips. We implemented several of them as we put our recipe together.
For best results when making Overnight Oatmeal:
Make sure you maintain a ratio of 2:1 with your liquid ingredients to your oats – (More liquid if you want soupier oats.) You need to have enough liquid for your oats to soak up. Too little will result in a thick concrete-type consistency and no one wants that.
Don’t overdo the sugar, especially if you are using fruit – Because it sits overnight with the flavors combining together, your oatmeal may end up tasting sweeter than you expect. You can always add more sugar next morning if you need it.
Remember to add a little salt – There is a saying you hear occasionally in baking – “It’s the salt that brings out the sweet.” And while it may not make much sense, it IS true that just a bit of salt tends to bring out the sweetness in sweet things. This is one of the reasons some people like salt or cheese with their apples. So don’t forget to add just a dash or pinch of salt.
Making Apple Pie Peanut Butter Overnight Oatmeal
So, we’ve had a couple of cans of coconut milk in the pantry for a while now, and I just wasn’t sure what to do with them. We’ve also had a large canister of rolled oats. I kept thinking about putting them together, but it wasn’t until my hubby came home with a bag of Fuji Apples (my favorites!) that it all started coming together in my mind.
Many people make overnight oatmeal in mason jars. Unfortunately, we don’t really have any. We decided to see if it would work out in a plastic container, and it did. So if you don’t have mason jars, do not be discouraged!
Into our plastic container, we added the following:
2 13.5-ounce cans coconut milk
1 1/2 cups rolled oats
2 medium apples chopped into small pieces
2/3 cup brown sugar
2 tsp. cinnamon
1 tsp. vanilla
1/2 cup peanut butter
pinch of salt
We stirred all the ingredients up together, put a lid on it, and let it sit in the refrigerator all night.
Overnight Oatmeal Results
These things are AMAZING! Goof and I were so pleasantly surprised, we just kept exclaiming over how good these were as we stuffed our faces! Fresh, cool, with lots of crispy sweet apple and peanut butter flavor, we felt like we were getting away with something!
We definitely didn’t feel like we needed any more sugar. I’m sure that it helped that we used coconut milk, though, as that already has some sweetness to it. So if you use a different liquid, you may need to adjust the sugar.
All in all, we are thrilled to have a new type of breakfast to enjoy, and I know that we will be trying different versions of it over time. But I imagine I’ll be wanting a lot more of THIS version, too, since I have a real weakness for apples and peanut butter.
